Ingredients:
- 100g dal (toor dal)
- 750g mixed vegetables (such as carrots, potatoes, brinjal, drumstick, etc.)
- 1 teaspoon tamarind paste
- 20g IndiSpice Co. Sambar Powder
- Salt to taste
- Water as needed
- A few curry leaves (optional)
- 1 tablespoon coconut oil (optional)
Instructions:
1. Cook Dal and Vegetables:
- Rinse 100g of dal and cook it in a pressure cooker or pot with enough water until soft. If using a pressure cooker, cook for 3-4 whistles.
- While the dal cooks, chop 750g of mixed vegetables. Add these to the cooked dal and continue cooking until tender, about 10-15 minutes.
2. Add Tamarind, Sambar Powder, and Salt:
- Once the vegetables are cooked, stir in 1 teaspoon of tamarind paste, 20g of IndiSpice Co. Sambar Powder, and salt to taste. Mix well.
3. Simmer and Serve:
- Let the sambar simmer on low for 10-15 minutes, stirring occasionally. Adjust the consistency with water if needed.
- Optional: Finish with a tadka of curry leaves fried in coconut oil for extra flavor.
